This cake is a perfect combination of lemon and raspberry. Made with organic ingredients it is much healthier than store bought cakes or mixes.
Raspberry filling
- 1 package (16 ounces) frozen organic raspberries
- 1 tablespoon organic sugar
- 1 ½ tablespoons organic cornstarch
- 1 teaspoon fresh squeezed organic lemon juice
Thaw raspberries. Drain liquid from organic raspberries and reserve them for later. Make sure there is ¼ of cup of organic raspberry juice. Add ⅛ cup of water to the raspberry juice. In a small sauce pan combine the raspberry juice, organic sugar, cornstarch and organic lemon juice. Stir until well mixed.
Heat mixture over medium heat stirring continuously until it comes to a boil and thickens. Remove from heat and allow to cool completely. Add as many organic raspberries as needed to the thicken mixture. Stir until combined.
Organic Lemon Raspberry Layer Cake
- 2 ¼ cups organic flour
- 1 ½ cups organic sugar
- ¾ cup extra virgin olive oil
- ¾ cup organic milk
- 2 ½ teaspoons organic baking powder
- 1 ½ teaspoons organic vanilla extract
- 3 organic eggs
Preheat oven to 375 degrees. Grease and flour two 9 inch round cake pans.
In a large mixing bowl add organic flour, organic sugar, extra virgin olive oil, organic milk, organic baking powder, organic vanilla extract and organic eggs. Beat ingredients on low speed until mixed, scraping bowl often. Increase speed to high for about two minutes, again scraping bowl occasionally. Pour batter into the two prepared pans. Bake for 25 minutes or until toothpick inserted into the middle of cake comes out clean.
Allow to cool for about ten minutes. Remove cakes from pans and cool completely.
Lemon Cream Cheese Frosting
- 3 tablespoons fresh squeezed organic lemon juice
- 1 teaspoon organic lemon zest
- 1 teaspoon organic vanilla extract
- 3 ounces organic cream cheese.
With mixer on low beat organic cream cheese until smooth. Add organic lemon juice, organic lemon zest and organic vanilla extract. Beat until combined.
Spread the organic raspberry filling onto one round cake layer, put the second layer on top of this layer. Starting with the sides apply a layer of frosting. Remember to go only in one direction to avoid getting cake crumbs on the part that been frosted. When the sides are done apply frosting to the top of cake. Add swirls and pipe some frosting at the base of the cake. Top the cake with a small slice of organic lemon. Serve and enjoy.
